The term restaurant emerged in the 16th century, from the French term "restaurant", which meant “Restorative Food”, as such referring purely to a soup.
Formerly, the only place to acquire ready-to-eat food outside the home was at "street kitchens". This type of kitchen is starting to appear in certain locations with a humble and simple structure, comprised solely of a stand where the ingredients are placed as well as a source of heat to cook the cuisine.
Currently, "Restaurant" is synonymous with a Commercial Establishment which is governed by various rules established by its regulatory body, ASAE (Autoridade de Segurança Alimentar e Económica) which provides a culinary service to its patrons.
